Alu,Dim & Peyajkolir 'Lalu-Bhulu' (Scramble Egg with Potato & spring onion)...:)

This one is a very easy & tasty side dish. When you are just too tired to cook and need something quick,this Scrambled Egg with Potato & spring onion is perfect. It can be served at breakfast, lunch or dinner,this type Egg Scramble is fantastic any time of the day.
once i watched this type dish on a television cooking show and loved the idea of scramble eggs with Potato & spring onion.& the name also interesting.Hope you also love the recipe & the name 'Lalu-Bhulu'....:)

Ingredients:-
  • 3 eggs- beaten with 2 tbs milk
  • 1 medium potato, peeled and cut into small pieces 
  • 1 onion chopped
  • 4-5 tablespoons mustard oil
  • 1 tsp turmeric
  • salt to taste
  • 1/4 cup chopped capsicum(Optional)
  • 1/4 cup chopped  mushrooms(Optional)
  • 1 tomatoes chopped
  • 1/2 tsp Panchforon/(Bengali Five-Spice)
  • 2 whole red chillis
  • 2 chopped green chillis
  • 1/2 tsp ginger paste
  • Salt & sugar as per taste.
Method:-
  1. Heat the oil in a non-stick pan/karai, add the Panchforon/(Bengali Five-Spice) & whole red chillis  and sauté for few seconds.
  2. Now add chopped onion,tomato,ginger paste & chopped green chillis & saute for 5 minutes.
  3. Add all the vegetables, salt ,little bit sugar and turmeric.
  4. Cover and cook on medium flame till the vegetables are cooked , stirring in between.
  5. Now add beaten eggs & mix well with vegetables.stir until the eggs are cooked.
  6. Serve it hot with rice, or chappati/Paratha.
