Beguni is a traditional Bengali recipe.This is a mouth-watering snack and ideal to be eaten on a rainy day. The eggplant/aubergines/brinjals are sliced, coated with chick pea batter and deep fried until crisp.Also sometime beguni is served in some Benjali wedding parties. Often times these are served as a side with a meal – esp. with dal and steaming hot rice or with Khichuri.
But they are also perfect rainy day snack and are enjoyed with a bowlful of Muri (puffed/krispy rice) . Rainy day is a perfect excuse to stay home, and enjoy with this type of snack's.The savories are also a popular street food.This humble delicacy has been replaced by more exotic menus.Today I share this nice snack's recipe with my own style .Hope You enjoy with my recipe.

Ingredients:
- 1 fresh eggplant/aubergine/brinjal .(Mideum size)
- 1 cup besan/chickpea flour/gram flour.
- 1 teaspoon cornstarch powder .
- 1 cup water, or as much needed to make a thick batter
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (Optional)
- a nice pinch of baking powder
- salt to taste
- 3/4 teaspoon nigella/kala jeera/kalonji.
- one pinch of Jowan/Ajowan.
- oil for deep frying.
Method:-
- Wash the eggplants/brinjal/aubergines and pat it dry. Thin slice the eggplants/brinjal/aubergines vertically/longitudinal.
- Mixing very well besan, baking powder, cornstarch and all type of spices.
- Add the water to the flour mix to make a smooth and semi- thick batter. 2/3 drops of Mustered oil put this mix(Optional tips). Make sure there are no lumps.
- Heat enough oil in a Karai/Frying pan to deep fry.
- Dip well each E
ggplant piece in the batter, check if it is coated from all sides. Then deep fry in medium heat until lightly brown from all sides.
- Remove from oil with a slotted spoon and drain on paper towels.
- Now serve hot & Crispy Beguni. Nice combination with a cup of hot yammy tea and a bowl of puffed rice/murmura/Muri.
