We know that Kolkata is famous for roadside eateries and roll corners. There are varieties of rolls like egg roll, chicken roll, egg - chicken roll, chicken tikka roll, combination of the above mentioned ingredients, the list is endless, even vegetarian roll like paneer roll is available these days.
Egg-Chicken Roll originated in Kolkata (Calcutta) and is often known as the Calcutta Kati Roll where spicy & cooked chicken cubes are placed & wrapped in paratha. A perfect recipe to enjoy in a get-together of family & friends.Once upon a time when I am school /collage student that time this one was a very very favourite food.
Here is the recipe for Egg-chicken roll. Hope you also enjoying with this easy recipe.
Ingredients: (For 6 persons)
- 300 grams boneless chicken, skinned & cut into 2" cubes
- 2tsp yogurt / curd
- 1 tbsp tandoori chicken masala
- salt to taste
- 2 tsp mustard oil
- 1 tbsp butter
- 1/4 tsp cumin seeds
- 1/2 tsp coriander powder & cumin powder
- 1/2 tsp coriander leaves, finely chopped (optional)
- 1/2 Capsicum finely sliced (lengthwise)
- Little Bit Broccoli sliced (Optional) fried with Onion & capsicum
- 6 Parathas ( pan fried flat breads)
- 6 eggs
- 1/2 cup vegetable/ canola/ sunflower cooking oil
- One large onions, finely sliced (lengthwise)
- 2 green chillies, finely chopped
- tomato sauce
- chat masala
- 1 lemon, halved
- 1/2 Cucumber finely sliced (lengthwise)
Method:-
- Wash the chicken cubes and beat a little with a kitchen knife.Sprinkle salt, lime juice and mustard oil over the chicken pieces and rub altogether.Add tandoori chicken masala .
- Whip the yogurt & pour over the chicken cubes, add the chopped coriander leaves and mix well. Marinate for at least 30 minutes.
- Heat a frying pan on low heat and add a tablespoon of oil to it. While the oil is heating, break an egg in a bowl. Season with salt to taste and whisk the egg till fluffy. Pour onto the pan and spread by tilting the pan from side to side. Now quickly put a Paratha onto the still 'wet' egg and allow to cook. The egg will soon cook and 'set'. This is when you flip the egg-paratha over. Cook for 30/40 seconds and remove from the pan.
- Now Place rested raw sliced onions, cucumber,chopped green chillies on the chicken cubes, add tomato sauce and sprinkle chat masala. Finally squeeze the lemon on the chicken cubes.Roll the parantha with the chicken stuffing firmly so that the chicken cubes do not fall.Wrap the roll in a tissue /wax paper and serve hot with tomato sauce / chilli sauce.
