This cake is perfect for morning or afternoon tea/juice. It's light and moist and jolly easy to make. For best results,make sure the bananas are overripe. For my house this cake is a great comfort food. My husband & 3yrs old sweety also really enjoys this whenever I make it and I do too.
Ingredients:-
- 1/2 cup / One stick unsalted butter
- 1/2 teaspoon vanilla
- 1 cups light brown sugar
- 2 eggs
- 2 cups sifted all-purpose flour
- 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3 finelly mashed ripe bananas
- 1/4 cup milk
- 1/2 cup chopped walnuts
Method:-
- At first in a large mixing bowl cream butter, vanilla and sugar until light and fluffy. Beat in eggs, one at a time.
- Sift flour, baking powder, baking soda and salt together.
- Mix mashed bananas and milk together in a different bowl.
- Blend dry ingredients into batter alternating with banana mixture.Add the Walnuts in when the mixture is smooth and make sure it's mixed together.
- Pre-heat oven to 350°F.
- Pour batter into 2 greased and floured round or square baking pans.
- Bake for 45 to 50 minutes or until cake tester inserted in center comes out clean.
- Cool 10 minutes, then turn out on racks until thoroughly cool.
- Now ready to serve .With hot tea/coffee or juice also good.
